I ran the live Macbuntu from the flash drive I created on the SH67H3.
It worked perfectly, all drivers were there, including the Asmedia USB 3.0 and the sound worked perfectly.
This is based off the Natty 11.04 version of Ubuntu.
So, if you want a system with all working components and the Mac UI interface and no kernel panics, this is the one.

I’m about to embark on the Shuttle SH67H3 adventure. While I am planning to build a Windows machine, I was excited to find out that I could also build a Hackintosh with it. Can you recommend a video card that fits the case? I will obviously need to order the 500w PSU, I have a 30″ monitor (2560×1600), and will need at least 1.5GB of VRAM but preferably 2GB. Also, do you think the BIOS will ever allow for unlocked CPUs? If not, which CPU makes sense for this rig? The low wattage i5-2405S, the i5-2500, or something else?

The H3 will take just about any video card. You can use the power supply calculator to determine if you need to upgrade when using certain video cards. If you are going to install Mac OSX, I would recommend an NVIDIA card.
There are other limitations when installing Mac on the H3, such as drivers for the USB 3.0 ports. There is no driver available yet.
Regarding the BIOS being able to unlock CPUs, at this point Shuttle doesn’t support it. But, Shuttle has been making quite a few changes lately, such as the ability to use different brand motherboards, not just theirs. So, it could be a possibility in the future.
You can use any Sandy Bridge CPU in the H3, the i5-2500 is a good choice, either S or K.
I would also suggest a Solid State Drive for it, especially for Windows, extremely fast boot times.
